Ingredients

For the Pastry
  • 320 g ready rolled puff pastry Can use homemade if up for the challenge!
For the Filling
  • 400 g pork sausages Provides protein and texture; sausage meat is a great substitute if preferred.
  • 100 g apple sauce Adds moisture and sweetness; consider making your own for a flavor boost!
  • 20 g dried apples Introduces texture and flavor depth; both store-bought and homemade work well.
  • 1 tsp dried thyme Enhances the flavor with herbaceous notes; fresh thyme can brighten the taste.
  • ¼ tsp sea salt Balances flavors; this is a crucial ingredient with no substitutions needed.
For the Glaze & Topping
  • 1 large egg Acts as a shiny glaze for a beautiful finish; milk can also work in a pinch.
  • 1 tsp sesame seeds Adds visual appeal and a bit of crunch; poppy seeds are a fantastic alternative.
  • ½ tsp dried thyme For topping; feel free to sprinkle fresh herbs for an extra burst of flavor.

Equipment

  • Oven
  • Baking Tray
  • Parchment paper
  • Mixing Bowl
  • Sharp knife

Method

Directions
  1. Preheat your oven to 190°C (fan-assisted) and line a baking tray with parchment paper.
  2. Mix the sausage filling by removing the casings from the sausages and combining them with apple sauce, dried apples, thyme, and salt in a mixing bowl.
  3. Slice the puff pastry in half lengthwise to create two strips.
  4. Fill each pastry strip by placing the sausage mixture down the center, and brush one edge with beaten egg.
  5. Roll the pastry to enclose the filling, sealing the edge on the bottom. Cut into preferred lengths.
  6. Brush each roll generously with more beaten egg, then cut slits on top to allow steam to escape. Sprinkle sesame seeds and dried thyme on top.
  7. Bake in the preheated oven for 20 minutes or until golden brown and crispy.
