- Preheat your oven to 190°C (fan-assisted) and line a baking tray with parchment paper.
 - Mix the sausage filling by removing the casings from the sausages and combining them with apple sauce, dried apples, thyme, and salt in a mixing bowl.
 - Slice the puff pastry in half lengthwise to create two strips.
 - Fill each pastry strip by placing the sausage mixture down the center, and brush one edge with beaten egg.
 - Roll the pastry to enclose the filling, sealing the edge on the bottom. Cut into preferred lengths.
 - Brush each roll generously with more beaten egg, then cut slits on top to allow steam to escape. Sprinkle sesame seeds and dried thyme on top.
 - Bake in the preheated oven for 20 minutes or until golden brown and crispy.
