How to Make
- In a large bowl, mash ripe bananas until smooth, then mix in eggs, egg whites, Greek yogurt, vanilla extract, ground cinnamon, and salt until creamy.
- Add oat flour, protein powder, and baking powder to the wet mixture. Incorporate maple syrup if using, and stir until mixed.
- Pour the batter into a lined loaf pan and bake in a preheated oven at 340°F (170°C) for 25 to 40 minutes.
- Let cool in the pan for at least 15 minutes before slicing.
