Instructions
- Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear in a skillet over medium heat for 3-4 minutes on each side until golden brown.
- In a bowl, whisk together BBQ sauce, honey, and minced garlic.
- In the same skillet, lightly toast uncooked rice for 1-2 minutes.
- Add chicken broth and half the sauce to the toasted rice. Stir, then add chicken back to the pan and pour remaining sauce over. Cover and simmer for 15 minutes.
- Stir in mixed vegetables, cover, and cook for an additional 5 minutes, until rice is tender and chicken is cooked through.
- Allow to sit for 5 minutes before serving.
