Method
 

  1. Season the cod fillets with salt, black pepper, garlic powder, and onion powder.
  2. In a large pan over medium-high heat, add olive oil and 1 tablespoon of butter until shimmering.
  3. Carefully place the cod into the hot pan and cook for 3-4 minutes on each side until golden brown.
  4. In the same pan, add the remaining 2 tablespoons of butter, and sauté minced garlic and flour for 1 minute.
  5. Pour in the dry white wine and lemon juice, allowing it to simmer for 3-4 minutes.
  6. Stir in heavy cream and thyme sprig; season with salt and pepper. Let it bubble gently.
  7. Return the cod back to the pan and simmer in the sauce for an additional 3-5 minutes.
  8. Garnish with fresh thyme or parsley and serve warm.
