Instructions
  1. Prepare Chicken: Season the boneless chicken thighs with curry powder, garlic powder, paprika, turmeric, salt, and pepper. Drizzle with oil and set aside.
  2. Cook Chicken: Heat a pan over medium heat and pan-fry the seasoned chicken for 5-6 minutes until golden brown and fully cooked. Set aside.
  3. Sauté Aromatics: In the same pan, toss in the chopped onion and minced garlic. Sauté for 2-3 minutes until fragrant and onions are translucent.
  4. Make Curry Sauce: Stir in 2 tablespoons of red curry paste, then pour in 1 cup of coconut milk and bring to a gentle simmer.
  5. Combine Ingredients: Add udon noodles and cooked chicken to the pan, letting them mingle for 2-3 minutes until noodles soften.
  6. Finish & Serve: Taste and adjust seasoning. Serve hot, garnished with a squeeze of lime juice, fresh cilantro, and red chili flakes.
