  • 24 pieces ladyfinger cookies or sponge cake for a different texture
  • 1 cup coconut milk preferably unsweetened
For the Cream
  • 2 cups mascarpone cheese don't substitute with low-fat options
  • 1/2 cup powdered sugar adjust to taste
  • 1 teaspoon vanilla extract use pure extract for best results
  • 1/2 cup shredded coconut optional: lightly toasted for added depth
For the Topping
  • 1/2 cup coconut flakes sweetened or unsweetened based on preference
  • 1/4 cup almonds chopped or flakes

Method
 

Preparation
  1. In a shallow dish, pour the coconut milk. Quickly dip each ladyfinger into the milk, allowing them to soak for just a few seconds.
  2. Arrange the soaked ladyfingers in a single layer at the bottom of your serving dish.
  3. In a mixing bowl, combine the mascarpone cheese, powdered sugar, vanilla extract, and shredded coconut. Whisk together until smooth.
  4. Spread half of the mascarpone mixture over the layer of ladyfingers.
  5. Add another layer of dipped ladyfingers, then spread the remaining mascarpone mixture over them.
  6. Cover the dish and chill in the refrigerator for at least 4 hours. Before serving, sprinkle with coconut flakes and chopped almonds.
