How to Make Easy Shrimp Ceviche
- Bring a large pot of salted water to a rolling boil.
- Turn off the heat and add shrimp. Let sit for 2-3 minutes until opaque and pink.
- Drain shrimp and allow to cool for 10 minutes. Chop into 1/2-inch pieces.
- In a large bowl, combine shrimp with lemon juice, lime juice, tomatoes, onion, jalapeño, cilantro, and salt. Toss gently.
- Cover and refrigerate for 1-4 hours.
- Before serving, fold in diced avocado. Serve with tostadas or tortilla chips.
