For the Ceviche
  • 1 pound Shrimp, peeled and deveined
  • 1/2 cup Lemon Juice freshly squeezed
  • 1/4 cup Lime Juice freshly squeezed
  • 2 medium Tomatoes, diced ripe summer tomatoes
  • 1/4 cup Red Onion, diced or substitute with milder onion
  • 1 medium Jalapeño, diced remove seeds for less heat
  • 1/4 cup Cilantro, chopped or substitute with parsley
  • 1 teaspoon Kosher Salt
  • 1 medium Avocado, diced for creaminess
  • 8 pieces Tostadas/Tortilla Chips for serving

Method
 

How to Make Easy Shrimp Ceviche
  1. Bring a large pot of salted water to a rolling boil.
  2. Turn off the heat and add shrimp. Let sit for 2-3 minutes until opaque and pink.
  3. Drain shrimp and allow to cool for 10 minutes. Chop into 1/2-inch pieces.
  4. In a large bowl, combine shrimp with lemon juice, lime juice, tomatoes, onion, jalapeño, cilantro, and salt. Toss gently.
  5. Cover and refrigerate for 1-4 hours.
  6. Before serving, fold in diced avocado. Serve with tostadas or tortilla chips.
