  • 1/4 cup Honey Use local honey for added flavor

Method
 

Steps
  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. Cream softened butter and granulated sugar in a mixing bowl until light and fluffy, about 3-4 minutes.
  3. Add the ricotta cheese, egg, vanilla extract, and almond extract, and mix until smooth.
  4. Whisk together the all-purpose flour, almond flour, ground pistachios, baking powder, and salt in a separate bowl.
  5. Combine the dry ingredients into the wet mixture gradually until a soft dough forms.
  6. Portion the dough into tablespoon-sized balls and space them out on the prepared baking sheet.
  7. Bake for 12-15 minutes until the edges are lightly golden. Cool on the tray for 5 minutes.
  8. Drizzle warm bites with honey and sprinkle extra pistachio pieces on top.
