How to Make Roasted Pumpkin with Yogurt Sauce
- Preheat Oven: Set your oven to 220°C (430°F) for perfect roasting.
- Prepare Pumpkin: Peel, deseed, and cut the pumpkin into 3cm cubes.
- Season Pumpkin: Toss pumpkin cubes with olive oil, minced garlic, salt, and pepper.
- Roast Pumpkin: Spread seasoned pumpkin on a lined baking tray and roast for 20 minutes, flip and roast for another 7-10 minutes.
- Make Yogurt Sauce: Mix Greek yogurt, garlic, lemon juice, olive oil, salt, and pepper in a bowl and let rest for 10 minutes.
- Toast Pine Nuts: In a dry skillet, toast pine nuts over medium heat until golden brown.
- Serve: Pile roasted pumpkin on a plate, drizzle with yogurt sauce, and garnish with pine nuts and sumac.
