  • 1 medium Pumpkin Alternatively butternut squash or sweet potato.
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 cloves Garlic Clove Finely minced.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Yogurt Sauce
  • 1 cup Greek Yogurt Plain, non-sweet yogurt.
  • 2 tablespoons Lemon Juice Freshly squeezed.
  • 2 tablespoons Fresh Coriander/Cilantro Substitute with parsley if desired.
  • 1 teaspoon Sumac Substitute with paprika if preferred.
For the Toppings
  • 1/4 cup Pine Nuts Or slivered almonds.

How to Make Roasted Pumpkin with Yogurt Sauce
  1. Preheat Oven: Set your oven to 220°C (430°F) for perfect roasting.
  2. Prepare Pumpkin: Peel, deseed, and cut the pumpkin into 3cm cubes.
  3. Season Pumpkin: Toss pumpkin cubes with olive oil, minced garlic, salt, and pepper.
  4. Roast Pumpkin: Spread seasoned pumpkin on a lined baking tray and roast for 20 minutes, flip and roast for another 7-10 minutes.
  5. Make Yogurt Sauce: Mix Greek yogurt, garlic, lemon juice, olive oil, salt, and pepper in a bowl and let rest for 10 minutes.
  6. Toast Pine Nuts: In a dry skillet, toast pine nuts over medium heat until golden brown.
  7. Serve: Pile roasted pumpkin on a plate, drizzle with yogurt sauce, and garnish with pine nuts and sumac.
