Method
 

How to Make
  1. In a mixing bowl, whisk the eggs, salt, pepper, and milk until smooth and well combined.
  2. Heat a non-stick skillet over medium heat and melt the butter. Pour in the egg mixture and gently scramble until just set, about 3-4 minutes.
  3. In a separate skillet, cook the breakfast sausage links over medium heat until browned and cooked through, about 5-7 minutes.
  4. Spray a clean skillet with cooking spray and heat over medium heat.
  5. On an 8-inch tortilla, place a generous spoonful of scrambled eggs in the center.
  6. Lay one cooked sausage link on the eggs, positioning it lengthwise.
  7. Evenly sprinkle a handful of shredded cheddar cheese over the sausage and eggs.
  8. Carefully roll the tortilla tightly, folding in the sides to enclose the filling.
  9. Place the roll-up seam-side down in the skillet and cook for 2-3 minutes until golden brown, then flip and cook the other side for another 2-3 minutes.
  10. Allow the roll-up to cool slightly before serving and repeat with remaining ingredients.
