- In a large pot, heat ½ cup of vegetable oil over medium heat until it shimmers.
- Gradually whisk in ½ cup of all-purpose flour, stirring constantly for 20-30 minutes.
- Add in diced onion, green bell pepper, celery, and minced garlic. Sauté for about 5 minutes.
- Mix in the sliced smoked sausage and chopped chicken thighs. Cook until browned, around 5-10 minutes.
- Gradually pour in 8 cups of chicken broth and a tablespoon of Worcestershire sauce.
- Sprinkle in 2 teaspoons of Cajun seasoning, 1 teaspoon of dried thyme, and 2 bay leaves.
- Lower the heat and let the gumbo simmer for 45 minutes, stirring occasionally.
