How to Make Authentic New Orleans Style Gumbo

  3. Add in diced onion, green bell pepper, celery, and minced garlic. Sauté for about 5 minutes.
  4. Mix in the sliced smoked sausage and chopped chicken thighs. Cook until browned, around 5-10 minutes.
  5. Gradually pour in 8 cups of chicken broth and a tablespoon of Worcestershire sauce.
  6. Sprinkle in 2 teaspoons of Cajun seasoning, 1 teaspoon of dried thyme, and 2 bay leaves.
  7. Lower the heat and let the gumbo simmer for 45 minutes, stirring occasionally.
  8. Stir in your peeled and deveined shrimp, cooking until they turn pink, about 5 minutes.
