Ingredients
  

For the Shrimp
  • 1 pound Shrimp Peeled and deveined
  • 2 tablespoons Olive Oil For marinating
  • 2 tablespoons Cajun Seasoning Store-bought or homemade
For the Pasta
  • 8 ounces Fettuccini Pasta Gluten-free pasta works well
For the Sauce
  • 2 tablespoons Butter Unsalted
  • 8 ounces Mushrooms Any variety
  • 2 tablespoons Shallots Chopped
  • 1 cup Chicken Broth Vegetable broth for vegetarian option
  • 1 cup Sour Cream Plain Greek yogurt as an alternative
  • 1 tablespoon Cornstarch Optional for thickening
  • 1 cup Roasted Red Bell Peppers Fresh peppers can be used
  • 2 tablespoons Capers Optional
  • to taste Salt
  • to taste Pepper

Method
 

Instructions
  1. Marinate shrimp in a bowl with olive oil and Cajun seasoning for about 15 minutes.
  2. Cook fettuccini in a large pot of salted boiling water for 8-10 minutes until al dente. Drain the pasta.
  3. Melt butter in a frying pan and sauté mushrooms and shallots until tender, about 4-5 minutes.
  4. Cook the seasoned shrimp in the same pan for about 2-3 minutes until they are pink and cooked through.
  5. Add chicken broth to the pan, bring to a boil, then simmer until reduced to about ¼ cup.
  6. Combine sour cream with cornstarch and stir in 1 cup of the reduced broth, then add back to the pan.
  7. Reintroduce the shrimp, mushrooms, roasted peppers, and capers, mixing well.
  8. Serve the sauce over fettuccini, garnishing with fresh parsley if desired.
