- Thinly slice a large onion and arrange the onion slices evenly in a baking dish.
- Layer the marinated chicken thighs on top of the prepared onion base.
- Preheat your oven to 375°F (190°C) and bake the shawarma tower for about 1 hour.
- While the chicken bakes, combine sliced red onion, lemon juice, ground sumac, and salt in a bowl.
- Remove the shawarma from the oven, let it rest for a few minutes, then serve with the fresh onion mixture on top.
