How to Make Mexican Picadillo
  1. Warm a large skillet over medium heat, then add the ground beef. Cook until mostly browned, carefully breaking it up. Drain excess grease and return to heat.
  2. Toss in the diced onion, green bell pepper, and potatoes. Sauté until softened. Add minced garlic and cook for another 30 seconds.
  3. Pour in the tomato sauce and beef broth, mix in salt, pepper, cumin, and coriander. Stir until well combined, adding the bay leaf.
  4. Bring to a simmer, cover your skillet, and let it cook for 10 minutes.
  5. After 10 minutes, remove the lid and stir. Cook uncovered for another 10 minutes, until potatoes are tender.
  6. Serve warm with flour tortillas and rice, ensuring to scoop up every bite!
