How to Make Mexican Picadillo
- Warm a large skillet over medium heat, then add the ground beef. Cook until mostly browned, carefully breaking it up. Drain excess grease and return to heat.
- Toss in the diced onion, green bell pepper, and potatoes. Sauté until softened. Add minced garlic and cook for another 30 seconds.
- Pour in the tomato sauce and beef broth, mix in salt, pepper, cumin, and coriander. Stir until well combined, adding the bay leaf.
- Bring to a simmer, cover your skillet, and let it cook for 10 minutes.
- After 10 minutes, remove the lid and stir. Cook uncovered for another 10 minutes, until potatoes are tender.
- Serve warm with flour tortillas and rice, ensuring to scoop up every bite!
