Ingredients
  

For the Stir-Fry
  • 2 tablespoons Cooking Oil Use high smoke point oils like avocado or peanut.
  • 500 grams Chicken Thighs Skinless and bone-in, cut into small pieces.
  • 4 cloves Garlic Cloves Crushed or grated.
  • 1 inch Fresh Ginger Grated fresh.
  • 2 medium Roma Tomatoes Quartered.
  • 1.5 teaspoons Salt Adjust to taste.
  • 2 teaspoons Kashmiri Chili Powder Substitute with cayenne or paprika if needed.
  • 1 teaspoon Freshly Ground Black Pepper Adjust based on spice preference.
  • 1 teaspoon Red Pepper Flakes Adjust according to taste.
  • 1 tablespoon Garam Masala Use half while cooking and save half for finishing.
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Ground Turmeric
  • 2 Bay Leaves
  • 2 whole Green Chilies Slit lengthwise.
For Garnish
  • ¼ cup Chopped Cilantro Sprinkle generously.
  • 1 inch Julienned Fresh Ginger
  • 1 teaspoon Crushed Cumin and Coriander Seeds Optional.
  • 1 tablespoon Butter or Ghee For finishing.

Method
 

Cooking Steps
  1. Heat the cooking oil in a hot wok until shimmering. Add the chicken pieces, searing them for 3-4 minutes per side until they turn golden brown and are cooked through.
  2. Stir in the crushed garlic and freshly grated ginger, cooking for another 3-4 minutes until fragrant.
  3. Add the quartered Roma tomatoes, salt, and spices (Kashmiri chili powder, black pepper, red pepper flakes, half of the garam masala, ground cumin, ground coriander, and turmeric). Stir well and cook for 20-25 minutes.
  4. Gently stir in the remaining garam masala, slit green chilies, chopped cilantro, and julienned ginger. Reduce the heat and simmer uncovered for about 5 minutes.
  5. Mix in any optional crushed spices and butter or ghee. Garnish with additional chopped cilantro and julienned ginger before serving warm.
