How to Make Authentic Jamaican Curry Chicken
  1. Begin by mixing the chicken with browning sauce, green seasoning, salt, smoked paprika, and curry powder in a bowl. Cover and refrigerate for about 3 hours or overnight for deeper flavor.
  2. In a large skillet, heat the olive oil over medium-high heat and dissolve the brown sugar. Sear the marinated chicken pieces for 3-4 minutes on each side until they develop a beautiful golden brown color. Remove the chicken from the skillet and set it aside.
  3. In the same skillet, add a bit more olive oil if needed and sprinkle in the curry powder. Toast it for 2-3 minutes until dark and fragrant, allowing the essential oils to release.
  4. Add minced garlic, ginger, scotch bonnets, green onions, chopped carrots, and bell pepper to the skillet. Sauté until aromatic and vibrant, about 3-4 minutes, then stir in allspice and any additional seasonings.
  5. Pour in your coconut milk and chicken stock. Stir the mixture well, then return the browned chicken to the skillet. Toss in the cubed potatoes and thyme, letting everything simmer together for 20-25 minutes or until the sauce thickens and the chicken is tender.
  6. Plate the delicious curry chicken and enjoy, garnished with chopped green onions or a sprinkle of red pepper flakes, alongside your choice of rice or sautéed vegetables.
