How to Make Authentic New Orleans Style Gumbo
  1. Heat Oil: Pour vegetable oil into a large pot over medium heat until shimmering, about 2-3 minutes.
  2. Make Roux: Gradually whisk in the all-purpose flour, cooking and stirring continuously for 20-30 minutes.
  3. Sauté Vegetables: Add the chopped onion, green bell pepper, celery, and minced garlic to the pot. Cook for about 5 minutes.
  4. Brown Meat: Stir in the sliced smoked sausage and chopped chicken thighs. Cook until browned, about 5-10 minutes.
  5. Combine Liquids: Gradually pour in the chicken broth and Worcestershire sauce, stirring well.
  6. Season: Sprinkle in the Cajun seasoning, dried thyme, bay leaves, salt, and pepper. Bring the mixture to a boil.
  7. Simmer: Reduce the heat and let it simmer for 45 minutes, stirring occasionally.
  8. Add Shrimp: Fold in the peeled and deveined shrimp carefully. Cook until they turn pink, about 5 minutes.
  9. Garnish: Remove the bay leaves and stir in the chopped green onions and fresh parsley.
  10. Serve: Ladle the gumbo over hot cooked rice.
