How to Make Beef Enchilada Casserole
- Heat a skillet over medium-high heat, then add ground beef. Cook until it's golden brown, breaking it apart as it cooks. Season with salt and pepper, and drain any excess fat.
- Stir in the taco seasoning, diced onion, and minced garlic. Cook until the onion turns translucent, releasing those wonderful flavors into the beef.
- In a greased casserole dish, start layering! Pour a bit of enchilada sauce at the bottom, followed by tortillas, ground beef, canned beans, corn, and a sprinkle of cheese. Repeat the layers until you reach the top, finishing with a generous cheese layer.
- Cover your casserole with foil and place it in the oven. Bake at 350°F for 25 minutes to allow all the ingredients to meld together.
- Remove the foil, sprinkle the mozzarella cheese on top, and bake uncovered for an additional 10-15 minutes until everything is bubbly and the cheese is perfectly melted.
- Once baked, remove the casserole from the oven and let it cool slightly. Top with sour cream, jalapenos, cilantro, and scallions. Serve it proudly alongside lime cilantro rice or cornbread for an incredible meal!
