Cooking Steps
  1. Trim and wash the whole chicken, then pat it dry and chop into smaller pieces.
  2. Combine chicken pieces with onion, garlic, escallion, thyme, browning sauce, dark brown sugar, Scotch Bonnet pepper, and season with salt and pepper. Marinate for at least 1 hour.
  3. Heat olive oil in a skillet over medium heat and brown the marinated chicken for about 5-10 minutes.
  4. Pour in the reserved marinade and chicken stock, bring to boil, then simmer uncovered for about 30 minutes.
  5. Stir in ketchup to thicken gravy, adjust seasoning and simmer until desired consistency.
