- Trim and wash the whole chicken, then pat it dry and chop into smaller pieces.
- Combine chicken pieces with onion, garlic, escallion, thyme, browning sauce, dark brown sugar, Scotch Bonnet pepper, and season with salt and pepper. Marinate for at least 1 hour.
- Heat olive oil in a skillet over medium heat and brown the marinated chicken for about 5-10 minutes.
- Pour in the reserved marinade and chicken stock, bring to boil, then simmer uncovered for about 30 minutes.
- Stir in ketchup to thicken gravy, adjust seasoning and simmer until desired consistency.
