Ingredients
  

For the Fish
  • 1 whole Snapper Fish Can substitute with kingfish or tilapia
  • 1 tsp Salt Essential for seasoning
  • 1/2 tsp Black Pepper Freshly ground recommended
  • 1 tbsp All Purpose Seasoning Can use seafood seasoning as alternative
For the Sauce
  • 1 medium Onion Red or yellow preferred
  • 3 cloves Garlic Minced
  • 1 cup Bell Peppers Mixed colors preferred
  • 1 medium Tomato Chopped
  • 1 whole Scotch Bonnet Pepper Adjust according to spice tolerance
  • 2 tbsp Fresh Thyme Or substitute with dried thyme
  • 2 stalks Escallion Chopped
For Cooking
  • 1/2 cup Neutral Cooking Oil Canola or sunflower recommended
For Flavor Enhancement
  • 2 tbsp Ketchup Can substitute with brown sugar
  • 1 tbsp Hoisin Sauce Optional
  • 2 tbsp Soy Sauce
  • 1 cup Chicken Broth Can use vegetable broth or water

Method
 

Preparation Steps
  1. Start by scaling, gutting, and washing the whole snapper with lemon or lime. Dry thoroughly and season inside and outside with salt, black pepper, and all-purpose seasoning.
  2. Heat neutral cooking oil in a skillet over medium-high heat. Carefully add fish and fry for about 5 minutes per side until golden brown and crispy. Remove and drain on a wire rack.
  3. In the same skillet, discard most of the oil, leaving a couple of tablespoons. Add onion, garlic, bell peppers, tomato, escallion, thyme, and Scotch Bonnet pepper; sauté until aromatic.
  4. Stir in ketchup, hoisin sauce (if using), soy sauce, and chicken broth. Gently place fried fish back into the skillet, spoon sauce over it, cover, and let simmer for 2-5 minutes.
  5. Uncover skillet, spoon more sauce over fish, remove from heat, and serve with traditional sides like Jamaican rice and peas or steamed cabbage.
