How to Make Brown Sugar Pineapple Chicken
  1. Pat the chicken dry and season generously with salt and pepper. Coat each piece with cornstarch.
  2. In a nonstick skillet, heat about 2 tablespoons of vegetable oil over medium-high heat.
  3. Add the chicken in batches, cooking for 5-7 minutes on each side until golden brown.
  4. In a bowl, whisk together the pineapple juice, brown sugar, soy sauce, rice vinegar, garlic, and ginger until smooth.
  5. Pour the sauce into the same skillet and bring to a gentle simmer. Stir in the cornstarch slurry and cook for 2-3 minutes until thickened.
