How to Make Brown Sugar Pineapple Chicken
- Pat the chicken dry and season generously with salt and pepper. Coat each piece with cornstarch.
- In a nonstick skillet, heat about 2 tablespoons of vegetable oil over medium-high heat.
- Add the chicken in batches, cooking for 5-7 minutes on each side until golden brown.
- In a bowl, whisk together the pineapple juice, brown sugar, soy sauce, rice vinegar, garlic, and ginger until smooth.
- Pour the sauce into the same skillet and bring to a gentle simmer. Stir in the cornstarch slurry and cook for 2-3 minutes until thickened.
- Return the cooked chicken and pineapple to the skillet, tossing to coat in the sauce. Heat through for about 2 minutes.
- Garnish with sliced green onions and serve hot over steamed rice or noodles.
