Directions
  1. In a large pot over medium heat, melt the coconut oil until it shimmers. Add grated ginger and minced garlic, cooking for 2 minutes until fragrant. Stir in red curry paste and cook for 1 additional minute.
  2. Mix in vegetable broth, maple syrup, chopped lemongrass, and soy sauce. Bring to a boil, then lower heat and simmer for 10 minutes.
  3. Stir in shiitake mushrooms, coconut milk, and tofu. Bring back to a gentle simmer and cook for 3 minutes.
  4. Remove from heat and stir in lime juice. Discard lemongrass before serving.
  5. Serve topped with chopped green onion and cilantro.
