Preparation
  1. In a bowl, combine Greek yogurt, lemon juice, garlic, paprika, cumin, and salt. Add the chicken thighs, ensuring they are well-coated. Allow to marinate for at least 30 minutes for the flavors to develop, or overnight for the best taste.
  2. Preheat your oven to 400°F (200°C). Slice the large onion into thick rounds and arrange them on a baking sheet as the base. Stack your marinated chicken thighs on top of the onion slices to create a beautiful tower.
  3. Once preheated, place the baking sheet in the oven and cook for about 1 hour, or until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown on the outside.
  4. Thinly slice the red onion and combine with lemon juice for a refreshing topping. Serve the chicken warm, accompanied by pita or rice.
