How to Make Enchiladas Suizas
- Preheat your oven to 375°F (190°C).
- Sauté onions and garlic in olive oil over medium heat until softened, about 3-4 minutes.
- Combine shredded chicken, chicken broth, and green enchilada sauce in the skillet. Let it simmer for about 5 minutes and season with salt and pepper to taste.
- Fry each tortilla lightly in oil for 30 seconds on each side.
- Mix the sour cream with a tablespoon of green sauce and set it aside.
- Layer a bit of the chicken mixture in a baking dish. Fill each tortilla with the mixture, roll them up, and place seam-side down in the dish.
- Pour the remaining chicken mixture over the rolled tortillas, making sure to cover them well. Then, top with shredded cheese.
- Bake for 20-25 minutes or until the cheese is bubbly and golden brown.
- Garnish with the sour cream sauce and fresh cilantro before serving.
