  • 2 cups Green Enchilada Sauce or salsa verde
  • 1 cup Chicken Broth or vegetable broth for vegetarian option
  • 1 cup Shredded Cheese Monterey Jack or Mexican blend
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1/4 cup Fresh Cilantro chopped, optional garnish

How to Make Enchiladas Suizas
  1. Preheat your oven to 375°F (190°C).
  2. Sauté onions and garlic in olive oil over medium heat until softened, about 3-4 minutes.
  3. Combine shredded chicken, chicken broth, and green enchilada sauce in the skillet. Let it simmer for about 5 minutes and season with salt and pepper to taste.
  4. Fry each tortilla lightly in oil for 30 seconds on each side.
  5. Mix the sour cream with a tablespoon of green sauce and set it aside.
  6. Layer a bit of the chicken mixture in a baking dish. Fill each tortilla with the mixture, roll them up, and place seam-side down in the dish.
  7. Pour the remaining chicken mixture over the rolled tortillas, making sure to cover them well. Then, top with shredded cheese.
  8. Bake for 20-25 minutes or until the cheese is bubbly and golden brown.
  9. Garnish with the sour cream sauce and fresh cilantro before serving.
