  • 12 oz Pasta Any shape such as fettuccine or penne
For the Onions
  • 3 large Onions Thinly sliced
  • 2 tbsp Butter For richness
  • 1 tbsp Olive Oil To prevent butter from burning
  • 1 tbsp Sugar To promote caramelization
For the Broth and Cheese
  • 2 cups Broth Beef or Vegetable based on preference
  • 1 cup Gruyère Cheese Offers creaminess and sharp flavor
  • 1 cup Mozzarella Cheese For extra melting
For Seasoning & Garnish
  • 1 tsp Salt Adjust to taste
  • 1 tsp Black Pepper Adjust to taste
  • 1 tbsp Fresh Thyme Optional garnish

Method
 

Cooking Instructions
  1. Bring a pot of salted water to a boil and cook your chosen pasta according to package instructions. Drain and set aside.
  2. In a large skillet over medium heat, combine butter and olive oil. Allow the butter to melt and blend well with the oil.
  3. Add thinly sliced onions with a pinch of salt. Cook for 15-20 minutes until soft and deeply caramelized.
  4. Stir in sugar and continue cooking for about 5 more minutes.
  5. Pour broth into the skillet and bring to a simmer. Cook for 5-10 minutes, seasoning with salt and pepper.
  6. Gently toss the cooked pasta into the onion mixture until evenly coated.
  7. Preheat your oven broiler. Transfer the mixture to an oven-safe dish and sprinkle Gruyère and mozzarella cheese on top.
  8. Broil for 2-3 minutes until the cheese is bubbling and golden.
  9. Allow to cool slightly, then garnish with fresh thyme before serving warm.
