- Prepare Sauce: Whisk together Dijon mustard, honey, optional whole grain mustard, minced garlic, apple cider vinegar, paprika, salt, and black pepper until well blended and smooth.
- Season Pork: Pat the pork chops dry with a paper towel. Season both sides generously with salt and black pepper.
- Sear Chops: Heat olive oil in a skillet over medium-high heat. Add the pork chops and sear for 3-4 minutes per side until golden brown.
- Glaze & Cook Through: Reduce heat to medium-low and pour the honey mustard sauce over the seared chops. Simmer for 5-7 minutes.
- Rest & Serve: Remove from heat and let chops rest for about 3 minutes. Garnish with fresh parsley and serve warm.
