Preparation Steps

  2. Toss the pork belly cubes with olive oil, salt, and pepper in a mixing bowl. Spread evenly on the baking sheet.
  3. Roast the pork belly for 25-30 minutes, flipping halfway through until golden brown and crispy.
  4. Prepare the glaze by mixing maple syrup, Dijon mustard, apple cider vinegar, minced garlic, smoked paprika, and cayenne pepper in a saucepan. Simmer for 3-4 minutes until thickened.
  5. Pour the maple mustard glaze over the roasted pork belly bites and toss gently to coat.
  6. Return glazed pork belly bites to the oven for an additional 10 minutes to caramelize the glaze.
  7. Let the bites cool for a few minutes, garnish with fresh parsley, and serve warm.
