Preparation
- Prepare the Magic Sauce: In a bowl, whisk together rich dark soy sauce, light soy sauce, oyster sauce, cooking wine, sugar, and white/black pepper until well combined.
- Soft-Scramble Eggs: Heat toasted sesame oil in a wok over medium heat, then gently add whisked eggs. Cook until soft and just set, about 1-2 minutes, then set aside.
- Sauté Aromatics & Beef: Heat vegetable oil in the same pan and sauté diced onion and minced garlic until fragrant, about 2 minutes. Add lean ground beef, breaking it up as it cooks until no pink remains, roughly 5-6 minutes.
- Caramelize Beef: Stir in half of the prepared magic sauce and let it cook for a couple of minutes, allowing it to reduce and coat the beef with a delicious glaze.
- Add Vegetables: Fold in frozen diced vegetables and stir for another 2 minutes until they are heated through.
- Fry Rice: Add day-old cold rice to the pan. Pour in the remaining sauce and toss continuously for 2-3 minutes, breaking up any clumps until the rice is heated through and well coated.
- Combine & Serve: Gently fold the soft-scrambled eggs back into the wok along with a sprinkle of sliced green onions. Mix everything well before serving hot in bowls.
