  • 1/2 teaspoon White/Black Pepper Adjust to taste or omit for a milder dish.
Fried Rice
  • 1 tablespoon Toasted Sesame Oil Sunflower oil can be used but will lack sesame flavor.
  • 2 large Eggs Omit for a vegetarian option or use scrambled tofu instead.
  • 1 tablespoon Vegetable Oil Peanut or canola oil can serve as substitutes.
  • 1 medium Onion Shallots can be an excellent substitute.
  • 2 cloves Garlic Fresh garlic is best, though garlic powder can suffice in a pinch.
  • 1 pound Lean Ground Beef Swap with ground chicken, turkey, or shrimp for variety.
  • 2 cups Frozen Diced Vegetables (Carrots, Peas, Corn) Feel free to use fresh veggies, adjusting cooking time as needed.
  • 4 cups Day-Old Cold Cooked Rice Fresh rice can be used but will need cooling.
  • 2 stalks Green Onions Chives can also work as an option.

Preparation
  1. Prepare the Magic Sauce: In a bowl, whisk together rich dark soy sauce, light soy sauce, oyster sauce, cooking wine, sugar, and white/black pepper until well combined.
  2. Soft-Scramble Eggs: Heat toasted sesame oil in a wok over medium heat, then gently add whisked eggs. Cook until soft and just set, about 1-2 minutes, then set aside.
  3. Sauté Aromatics & Beef: Heat vegetable oil in the same pan and sauté diced onion and minced garlic until fragrant, about 2 minutes. Add lean ground beef, breaking it up as it cooks until no pink remains, roughly 5-6 minutes.
  4. Caramelize Beef: Stir in half of the prepared magic sauce and let it cook for a couple of minutes, allowing it to reduce and coat the beef with a delicious glaze.
  5. Add Vegetables: Fold in frozen diced vegetables and stir for another 2 minutes until they are heated through.
  6. Fry Rice: Add day-old cold rice to the pan. Pour in the remaining sauce and toss continuously for 2-3 minutes, breaking up any clumps until the rice is heated through and well coated.
  7. Combine & Serve: Gently fold the soft-scrambled eggs back into the wok along with a sprinkle of sliced green onions. Mix everything well before serving hot in bowls.
