- Prepare the Sauerkraut: Drain the sauerkraut to remove excess liquid using a fine mesh strainer or paper towels.
- Assemble Sandwiches: Spread softened butter on one side of each slice of rye bread. On the other side, slather Thousand Island dressing, layer Swiss cheese, pastrami, and sauerkraut, and cap with remaining slices.
- Grill Sandwiches: Heat a skillet over medium heat, place sandwiches on it and grill for 3-4 minutes until golden brown and cheese melts.
- Serve Immediately: Remove from skillet, slice sandwiches in half and serve warm.

Notes
Optional: Add a pickle on the side for extra zing. Slice cold pastrami for easier cutting.
