Ingredients
  

For the Sauce
  • 1 cup Hoisin sauce
  • 1/4 cup Sweet chili sauce
  • 1/4 cup Water
  • 2 tablespoons Rice vinegar
  • 1 teaspoon Crushed red pepper flakes
  • 3 cloves Garlic, minced
  • 1/4 cup Sliced green onions plus extra for garnish
For the Chicken
  • 1 pound Boneless chicken breasts
  • 2 large Eggs
  • 1 cup Cornstarch
  • 1 cup All-purpose flour
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Cayenne pepper
  • 1 cup Neutral flavored oil for frying

Method
 

Preparation
  1. Whisk all the sauce ingredients together in a large bowl, then set aside.
  2. Pat the chicken pieces dry with paper towels.
  3. Whisk the eggs in a medium bowl until combined.
  4. Mix together the cornstarch, all-purpose flour, kosher salt, black pepper, garlic powder, and cayenne pepper in a large bowl.
  5. Heat neutral oil in a large skillet to 350°F.
  6. Dip chicken in the egg mixture, then dredge in the flour mixture.
Cooking
  1. Fry the chicken in batches for 5-6 minutes until golden brown.
  2. Drain excess oil and remove chicken.
  3. Cook minced garlic in the skillet for 30 seconds.
  4. Add the sauce and green onions, stirring gently until the sauce bubbles.
  5. Toss the fried chicken in the sauce until coated.
  6. Serve immediately over rice with garnishes.
