Cooking Instructions
  1. Whisk together olive oil, minced garlic, ground cumin, coriander, smoked paprika, turmeric, cinnamon, salt, black pepper, and fresh lemon juice in a large bowl.
  2. Generously coat the boneless, skinless chicken thighs in the marinade and let them sit at room temperature for at least 15 minutes, or refrigerate overnight.
  3. Place the sliced red onion in the bottom of your slow cooker and layer the marinated chicken thighs on top.
  4. Cover the slow cooker and cook on low for 4 hours until the chicken is tender.
  5. Remove the chicken from the cooker, shred it or slice it, and serve with fresh pita, vegetables, or your favorite sauce.
