- Whisk together olive oil, minced garlic, ground cumin, coriander, smoked paprika, turmeric, cinnamon, salt, black pepper, and fresh lemon juice in a large bowl.
- Generously coat the boneless, skinless chicken thighs in the marinade and let them sit at room temperature for at least 15 minutes, or refrigerate overnight.
- Place the sliced red onion in the bottom of your slow cooker and layer the marinated chicken thighs on top.
- Cover the slow cooker and cook on low for 4 hours until the chicken is tender.
- Remove the chicken from the cooker, shred it or slice it, and serve with fresh pita, vegetables, or your favorite sauce.
