For the Quick Pickled Cucumbers
  • 2 cups Cucumbers thinly sliced
  • 1/2 cup Vinegar rice vinegar preferred
  • 1 tablespoon Sugar adjust to taste
  • 1 teaspoon Salt essential for pickling
For Serving
  • 8 pieces Tortillas corn or flour tortillas

Preparation
  1. In a slow cooker, mix together ground beef, soy sauce, fresh ginger, minced garlic, and gochugaru. Ensure all ingredients are evenly coated.
  2. Set your slow cooker on low and let it cook for 4 to 5 hours, checking around 3.5 hours to avoid drying out.
  3. While the beef cooks, prepare quick pickled cucumbers by combining sliced cucumbers with vinegar, sugar, and salt in a bowl. Refrigerate for at least 30 minutes.
  4. Once the beef is tender, take a tortilla and spoon in the savory Korean beef mixture. Top with quick pickled cucumbers.
  5. Serve your tacos warm for the best flavor.
