How to Make Smothered Green Chili Burritos
- Heat Olive Oil in a skillet over medium heat.
- Add chopped onion and sauté for about 3-4 minutes until soft and translucent.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Add ground beef and cook until browned, about 6-7 minutes.
- Sprinkle in the spices and stir well to coat the meat for 1-2 minutes.
- Pour in diced green chilies and red enchilada sauce, then simmer for 5 minutes.
- Stir in sour cream until fully incorporated.
- Preheat oven to 375°F (190°C).
- Grease a baking dish and lay out the flour tortillas.
- Take filling and sprinkle shredded cheese; roll the tortillas seam-side down in the baking dish.
- Pour remaining beef mixture over burritos and top with more cheese.
- Cover with foil and bake for 15 minutes, then remove foil and bake for another 5-10 minutes.
- Let cool slightly before serving and garnish with fresh cilantro.
