Method
 

Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Sauté the vegetables by heating olive oil in a skillet over medium heat. Add diced bell pepper and onion, cooking until softened, about 5-7 minutes.
  3. Brown the sausage by adding it to the skillet. Cook until beautifully browned, about 7-10 minutes. Stir in the diced green chiles for the last minute to infuse flavor.
  4. Whisk together in a large bowl the eggs, milk, salt, pepper, chili powder, and cumin until fully combined.
  5. Layer crushed tortilla chips in a greased baking dish.
  6. Spoon the sausage and vegetable mixture over the chips evenly.
  7. Pour the egg mixture evenly on top, followed by a generous layer of shredded cheese.
  8. Bake in the preheated oven for 35-40 minutes, or until the eggs are set and the top is golden.
  9. Garnish with fresh cilantro before serving, alongside salsa or sour cream.
