Method
 

Preparing the Chicken
  1. Begin by flattening the boneless, skinless chicken breasts to a uniform thickness using a mallet.
  2. Generously season both sides of the chicken with salt, pepper, and Italian seasoning.
  3. Arrange three bowls: one with all-purpose flour, one with beaten eggs, and one with breadcrumbs.
  4. Dredge each chicken breast in flour, dip into the eggs, then coat with breadcrumbs.
  5. Heat olive oil in a skillet over medium heat until shimmering.
  6. Carefully add the breaded chicken and fry for 5-7 minutes per side until golden brown.
  7. Drain on paper towels to remove excess oil.
Assembling the Sandwich
  1. Warm the vodka sauce over low heat, stirring occasionally.
  2. Lightly toast slices of bread in the same skillet if desired.
