Preparing the Chicken
- Begin by flattening the boneless, skinless chicken breasts to a uniform thickness using a mallet.
- Generously season both sides of the chicken with salt, pepper, and Italian seasoning.
- Arrange three bowls: one with all-purpose flour, one with beaten eggs, and one with breadcrumbs.
- Dredge each chicken breast in flour, dip into the eggs, then coat with breadcrumbs.
- Heat olive oil in a skillet over medium heat until shimmering.
- Carefully add the breaded chicken and fry for 5-7 minutes per side until golden brown.
- Drain on paper towels to remove excess oil.
Assembling the Sandwich
- Warm the vodka sauce over low heat, stirring occasionally.
- Lightly toast slices of bread in the same skillet if desired.
- Layer each slice with fried chicken and a generous spoonful of vodka sauce.
- Sprinkle shredded mozzarella cheese on top.
- Cover the pan briefly to allow the heat to melt the cheese.
- Optionally include fresh basil leaves on top and finish with another slice of bread.
- Cut in half for easy handling and enjoy!
