Method
 

Steps to Prepare

  2. In another bowl, combine garlic powder, paprika, onion powder, cayenne pepper, dried thyme, basil, oregano, salt, and black pepper.
  3. Coat each fish fillet with melted butter and sprinkle the spice mix over the fillets.
  4. Heat olive oil in a skillet over medium-high heat. Cook the seasoned fish fillets for 3-4 minutes per side.
  5. Warm the corn tortillas in a separate pan or microwave.
  6. Layer tortillas with cooked fish, top with shredded cabbage, drizzle with chipotle-lime sauce, and sprinkle Cotija cheese.
  7. Serve immediately with lime wedges on the side.
