Method
 

Directions
  1. Preheat the oven to 400°F (200°C).
  2. Melt butter in a medium pan over medium heat. Add minced garlic, chopped onion, and diced celery; cook until soft, about 5 minutes.
  3. Stir in the flour to form a roux; cook for 1 minute.
  4. Gradually whisk in seafood stock and heavy cream, stirring until thickened, approximately 5-7 minutes.
  5. Season with Old Bay, salt, and pepper. Toss in the shrimp and cook until pink, about 2-3 minutes. Gently fold in lobster meat and parsley; remove from heat.
  6. In a mixing bowl, whisk together flour, baking powder, garlic powder, and salt. Cut in cold grated butter until crumbly.
  7. Stir in shredded cheddar and any optional herbs. Add milk and mix gently until just combined.
  8. Divide the seafood mixture into ramekins or a baking dish. Spoon the biscuit dough over the top.
  9. Bake for 20-25 minutes until the biscuits are golden and cooked through.
  10. Let rest for 5-10 minutes before serving.
