  • 3 large Eggs Room temperature
  • 1 cup Cream Half-and-half can be substituted
  • 1 teaspoon Cinnamon
  • 1 teaspoon Nutmeg
For the Crust
  • 1.5 cups Spelt Flour All-purpose flour can be used as a substitute
  • 0.5 cups Cold Butter Must be cold for flakiness
  • 0.5 teaspoon Salt Kosher salt recommended
  • 2 tablespoons Sugar Brown sugar for deeper flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Roll out your spelt dough and place it in a pie dish. Blind bake for 15-20 minutes until lightly golden.
  2. In a large bowl, whisk together the apple butter, eggs, cream, cinnamon, and nutmeg until smooth and well combined.
  3. Pour the filling into the baked crust. Bake at 325°F (160°C) for 40-45 minutes, until the edges are set and the center has a slight wobble.
  4. Allow the pie to cool at room temperature, then transfer to the fridge to chill for at least 6 hours.
  5. Slice the pie and serve chilled, optionally topping each slice with a dollop of maple whipped cream.
