Preparation
- Preheat your oven to 350°F (175°C). Roll out your spelt dough and place it in a pie dish. Blind bake for 15-20 minutes until lightly golden.
- In a large bowl, whisk together the apple butter, eggs, cream, cinnamon, and nutmeg until smooth and well combined.
- Pour the filling into the baked crust. Bake at 325°F (160°C) for 40-45 minutes, until the edges are set and the center has a slight wobble.
- Allow the pie to cool at room temperature, then transfer to the fridge to chill for at least 6 hours.
- Slice the pie and serve chilled, optionally topping each slice with a dollop of maple whipped cream.
