For the Chicken
  • 4 pieces Bone-in Chicken Thighs skin-on for extra richness
  • to taste Salt
  • to taste Pepper
For the Sauce
  • 1 cup Dry White Wine (Chardonnay) substitute with broth for a non-alcoholic version
  • 1/4 cup Dijon Mustard whole grain can substitute for added texture
  • 1 cup Chicken Broth low-sodium recommended
Aromatic Additions
  • 1 tsp Dried Thyme or fresh thyme if preferred
  • 1 medium Onion (finely chopped) shallots can be used for a milder taste
  • 3 cloves Garlic (minced) can use garlic powder (1/4 tsp per clove)
Garnish
  • 1/4 cup Fresh Parsley (chopped) add before serving

Instructions
  1. Season the bone-in chicken thighs generously with salt and pepper.
  2. Sauté chopped onion and minced garlic in a skillet over medium heat for 2-3 minutes until translucent and fragrant.
  3. Whisk together dry white wine, chicken broth, and Dijon mustard in a bowl until well combined.
  4. Layer the sautéed onion and garlic at the bottom of the slow cooker; then, place the seasoned chicken thighs on top.
  5. Pour the wine mixture over the chicken and sprinkle with dried thyme.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours until tender.
  7. Adjust seasoning if necessary, garnish with fresh parsley, and serve.
