- Wash the cucumbers thoroughly under running water. Pat them dry with a clean kitchen towel.
- Mix the dressing by combining salt, sugar, sesame oil, soy sauce, and rice vinegar in a small bowl. Stir until dissolved.
- Smash each cucumber lightly on a cutting board with a heavy knife or a rolling pin.
- Cut the smashed cucumbers into bite-sized pieces at a 45-degree angle.
- Combine the cut cucumbers with the dressing, minced garlic, and optional chili oil in a large bowl. Toss gently.
- Serve the salad immediately, garnished with toasted sesame seeds and chopped cilantro.
