For the Dressing

  • 2 tablespoons Rice Vinegar Apple cider vinegar can be a suitable substitute.
  • 1 teaspoon Chili Oil Optional for adding spiciness.
For the Garnish
  • 1 tablespoon Toasted Sesame Seeds Consider chopped nuts for added texture.

Method
 

Preparation
  1. Wash the cucumbers thoroughly under running water. Pat them dry with a clean kitchen towel.
  2. Mix the dressing by combining salt, sugar, sesame oil, soy sauce, and rice vinegar in a small bowl. Stir until dissolved.
  3. Smash each cucumber lightly on a cutting board with a heavy knife or a rolling pin.
  4. Cut the smashed cucumbers into bite-sized pieces at a 45-degree angle.
  5. Combine the cut cucumbers with the dressing, minced garlic, and optional chili oil in a large bowl. Toss gently.
  6. Serve the salad immediately, garnished with toasted sesame seeds and chopped cilantro.
