For the Bacon and Mushrooms
  • 6 slices Bacon Substitute with turkey bacon or vegetarian options.
  • 8 oz Mushrooms Button or cremini mushrooms work best.
For Topping
  • 1 cup Pepper Jack cheese Use cheddar or mozzarella for a milder flavor.
For Seasoning
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Cooking Instructions
  1. Season chicken breasts generously with salt and pepper. Set aside.
  2. Cook bacon in a skillet over medium heat until crispy. Remove and let drain on paper towels.
  3. In the reserved fat, sauté garlic and mushrooms until tender and golden brown, about 5-7 minutes.
  4. Reduce heat, add cream cheese and spinach. Stir until cream cheese melts and mixture is creamy.
  5. Return bacon, add chicken, and cover; simmer until chicken reaches 165°F, about 10-12 minutes.
  6. Sprinkle Pepper Jack cheese over chicken, cover, and cook until melted, about 3-5 minutes.
  7. Plate chicken and spoon creamy spinach mixture over top. Enjoy warm with sides.
