Cooking Instructions
- Season chicken breasts generously with salt and pepper. Set aside.
- Cook bacon in a skillet over medium heat until crispy. Remove and let drain on paper towels.
- In the reserved fat, sauté garlic and mushrooms until tender and golden brown, about 5-7 minutes.
- Reduce heat, add cream cheese and spinach. Stir until cream cheese melts and mixture is creamy.
- Return bacon, add chicken, and cover; simmer until chicken reaches 165°F, about 10-12 minutes.
- Sprinkle Pepper Jack cheese over chicken, cover, and cook until melted, about 3-5 minutes.
- Plate chicken and spoon creamy spinach mixture over top. Enjoy warm with sides.
