Baking Instructions
- Preheat Oven: Set your oven to 375°F and prepare two baking sheets by lining them with parchment paper.
- Cream Ingredients: In a large mixing bowl, beat the softened butter with both sugars until light and fluffy, about 2-3 minutes.
- Mix Wet Ingredients: Add large eggs and vanilla extract; beat until smooth and well combined.
- Combine Dry Ingredients: Whisk together flour, cornstarch, baking soda, and salt; gradually blend into the wet mixture until just combined.
- Fold in Mix-ins: Gently fold in mini marshmallows, broken graham crackers, and chocolate chips.
- Shape Cookies: Form the cookie dough into balls (about 2-3 tbsp each) and place them on the prepared sheets.
- First Bake: Bake cookies for about 10 minutes until edges are set while centers remain soft.
- Add Toppings: Press a few marshmallows and chocolate chips onto tops of cookies as soon as they come out of the oven.
- Second Bake/Optional Broil: Bake for an additional 1-2 minutes or broil until marshmallows are lightly golden.
- Cool: Let cookies cool on baking sheets for 2-3 minutes before transferring to a wire rack.
