  • 1 cup shredded cheddar cheese or any preferred cheese
For the Honey Butter Drizzle
  • 1/4 cup honey agave syrup for vegan option
  • 1/4 cup softened butter use higher fat for best flavor
Optional Garnish
  • 2 tbsp fresh chives or parsley any fresh herbs can work

Method
 

Preparation
  1. Preheat the oven: Begin by preheating your oven to 400°F (200°C). Grease a mini muffin tin or silicone molds.
  2. Mix dry ingredients: In a large mixing bowl, whisk together cornmeal, flour, sugar, baking powder, and salt until fully combined.
  3. Combine wet ingredients: In a separate bowl, whisk the buttermilk, eggs, and melted butter until smooth and creamy.
  4. Combine mixtures: Pour the wet ingredients into the bowl with the dry ingredients and stir gently until just mixed.
  5. Fold in extras: Carefully fold in the sweet corn kernels and shredded cheddar cheese.
  6. Fill muffin tins: Spoon the batter into your prepared muffin tins, filling each cup about 2/3 full.
  7. Bake and check: Bake for 12-15 minutes, until the tops are golden brown and a toothpick comes out clean.
  8. Prepare the drizzle: Mix softened butter and honey in a small bowl until creamy.
  9. Cool and serve: Allow the poppers to cool slightly before removing them and drizzle with honey butter.
