Preparation
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a medium skillet over medium-low heat.
- Sauté onion and garlic until tender, about 4 minutes.
- Add black beans and vegetable broth, cooking for an additional 3 minutes.
- Mix in cumin, black pepper, salt, and cilantro, then remove from heat.
- Spray an 8×8-inch casserole dish with nonstick cooking spray.
- Layer a tortilla, followed by a portion of the black bean mixture, salsa, and cheese. Repeat layers, finishing with cheese on top.
- Cover with foil and bake for 20 minutes.
- Remove the foil and bake an additional 8–10 minutes until cheese is bubbly and golden brown.
