  • 1 teaspoon Pepper
For the Sauce
  • 1 can Coconut Milk full-fat provides the best texture
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Chili Flakes adjust or omit for a milder dish
  • 2 tablespoons Lime Juice fresh
  • 1 medium Onion diced
  • 3 cloves Garlic minced
  • 1 cup Chicken Broth gluten-free if needed
  • 2 tablespoons Tomato Paste
For Garnishing
  • 1/4 cup Fresh Cilantro or parsley
  • 2 wedges Lime additional

Method
 

Directions
  1. Season the chicken breasts generously with salt and pepper.
  2. Heat a large skillet over medium-high heat and sear the chicken for 5-7 minutes on each side.
  3. In the same skillet, sauté diced onion and minced garlic for 3-4 minutes. Stir in smoked paprika, chili flakes, coconut milk, chicken broth, lime juice, and tomato paste.
  4. Place the seared chicken back into the skillet, cover it, and simmer for 15-20 minutes.
  5. Taste your sauce and adjust the seasoning. Stir in fresh cilantro before serving.
