Ingredients
  

For the Skewers
  • 1 lb Boneless, skinless chicken breasts cut into 1-inch cubes
  • 1 tsp Kosher salt
  • 1 tsp Black pepper
  • 1 tsp Chili powder
  • 2 tbsp Extra virgin olive oil
  • 2 medium Jalapeno peppers halved and seeded
  • 2 medium Yellow peaches ripe and juicy
For the Glaze
  • 1/2 cup Peach preserves
  • 2 tbsp Extra virgin olive oil
  • 2 tbsp Soy sauce
  • 1 tbsp Apple cider vinegar
  • 1 tbsp Dijon mustard
  • 2 cloves Garlic minced
  • 1/2 tsp Kosher salt
  • 1/2 tsp Black pepper
  • 1/4 tsp Red pepper flakes

Method
 

Preparation
  1. Marinate Chicken: In a large bowl, combine the chicken cubes, kosher salt, black pepper, chili powder, and olive oil. Toss everything together until the chicken is generously coated in flavor; let it sit for about 10 minutes.
  2. Assemble Skewers: Take your soaked wooden skewers and start threading them. Begin with a peach wedge, followed by chicken, then jalapeño, repeat one more time with chicken and finish with another peach piece.
  3. Preheat Air Fryer: Set your air fryer to 375°F (190°C) to heat up while you prepare the skewers.
  4. Brush and Place: Lightly brush the assembled skewers with olive oil to prevent sticking, then place them into the air fryer basket in a single layer.
  5. Cook the Skewers: Air fry the skewers for 11-12 minutes, flipping halfway through. They're ready when the chicken reaches an internal temperature of 165°F, and the peaches are beautifully caramelized.
  6. Prepare the Glaze: While cooking, mix together the peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes in a medium saucepan. Heat until well combined.
  7. Glaze and Serve: Once the skewers are cooked, generously brush them with the peach glaze for an added punch of flavor. Serve warm and enjoy!
