How to Make Spicy Nigerian Chicken Stew
  1. Rinse and pat dry the chicken pieces, then season them generously with salt and pepper.
  2. In a large pot, heat the vegetable oil over medium heat.
  3. Add the chopped onions to the pot, stirring frequently until they become soft and translucent, about 5-7 minutes.
  4. Stir in the minced garlic and ginger, cooking for another 2 minutes until fragrant.
  5. Toss in the chopped fresh chilies, ground coriander, ground cumin, paprika, and thyme. Cook for 1-2 minutes.
  6. Add the seasoned chicken pieces to the pot and brown them for about 5-10 minutes, turning occasionally.
