Ingredients
  

For the Prawns
  • 300 g King Prawns Tender and sweet
  • 1 tsp Salt To taste
  • 0.5 tsp Black Pepper To taste
  • 2 tbsp Shao Xing Wine Optional
For the Noodles
  • 300 g Egg Noodles Fresh or dried
For the Vegetables
  • 3 cloves Garlic Finely chopped
  • 1 medium Onion Thinly sliced
  • 1 medium Carrot Julienne
  • 1 medium Bell Pepper Any color
  • 2 stalks Spring Onion Chopped
  • 100 g Bean Sprouts
  • 1 medium Red Chilli Pepper Optional
For the Sauce
  • 2 tbsp Vegetable Oil For cooking
  • 2 tbsp Light Soy Sauce
  • 1 tbsp Dark Soy Sauce
  • 1 tbsp Oyster Sauce Vegetarian option available
  • 1 tbsp Sesame Oil For flavor
  • 1 tsp Sugar Adjust to taste

Method
 

Cooking Steps
  1. Season king prawns with salt, black pepper, and Shao Xing wine; set aside.
  2. Cook the egg noodles according to package instructions until al dente; drain and set aside.
  3. Mix the sauce by combining light soy sauce, dark soy sauce, oyster sauce, sesame oil, and sugar in a bowl; set aside.
  4. Heat a wok or large pan over medium-high heat; add vegetable oil.
  5. Sauté the seasoned prawns for 2-3 minutes until they turn opaque; remove from the wok.
  6. Add a drizzle of oil and sauté the garlic until fragrant.
  7. Incorporate the onion, carrot, and bell pepper; stir-fry for about 1 minute.
  8. Toss in the cooked noodles, pour the sauce mixture over them; stir-fry for 2-3 minutes.
  9. Gently mix in the prawns, spring onions, bean sprouts, and red chilli; stir-fry for another 1-2 minutes.
  10. Serve immediately, garnished with extra spring onions or sesame seeds.
