  • 2 cups Oats rolled or quick oats
  • 1 cup Milk almond or cashew milk for vegan
  • 1 large Egg flax or chia egg for vegan
  • 1 medium Banana acts as natural sweetener
  • 2 teaspoons Baking Powder
  • 1/4 cup Hemp Seeds chia seeds as a substitute
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt
  • 1 tablespoon Black Coloring Paste/Activated Charcoal
  • to taste Honey or Maple Syrup optional
Toppings
  • 1 cup Greek Yogurt non-dairy alternative if preferred
  • 1 tablespoon Matcha Powder substitute spinach powder if desired
  • as needed Candy Eyeballs for decoration

Method
 

Preparation
  1. Blend all batter ingredients until smooth and creamy, about 30 seconds.
  2. Let the blended batter sit for 1 minute to thicken. Adjust with milk if necessary.
  3. Heat a pancake pan over medium heat and coat with cooking spray or coconut oil.
  4. Pour 1/4 cup of batter for each pancake and cook until lightly browned, about 1-2 minutes. Flip and cook until golden brown.
  5. Mix Greek yogurt with matcha powder and honey until smooth to prepare the topping.
  6. Stack pancakes, top with green yogurt mixture, and add candy eyeballs for decoration.
