Strawberries
  • 1 cup Fresh Strawberries Chopped.
Crumb Topping
  • 1/2 cup Flour
  • 1/4 cup Sugar
  • 1/4 cup Melted Butter

Method
 

Muffin Preparation
  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners.
  2. Mix softened cream cheese, granulated sugar, egg yolk, and vanilla together in a bowl until smooth.
  3. Whisk together in a large bowl the all-purpose flour, sugar, baking powder, baking soda, and salt.
  4. Combine eggs, milk, vegetable oil, and vanilla extract in a separate bowl, then blend until smooth.
  5. Stir the wet and dry ingredients gently until just combined.
  6. Toss the chopped fresh strawberries with a tablespoon of flour, then fold them into the batter.
  7. Prepare the crumb topping by mixing flour and sugar, then combine with melted butter.
  8. Fill muffin cups halfway with batter, add cream cheese filling, top with more batter and crumb topping.
  9. Bake for 18 to 22 minutes, checking doneness with a toothpick.
