Muffin Preparation
- Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners.
- Mix softened cream cheese, granulated sugar, egg yolk, and vanilla together in a bowl until smooth.
- Whisk together in a large bowl the all-purpose flour, sugar, baking powder, baking soda, and salt.
- Combine eggs, milk, vegetable oil, and vanilla extract in a separate bowl, then blend until smooth.
- Stir the wet and dry ingredients gently until just combined.
- Toss the chopped fresh strawberries with a tablespoon of flour, then fold them into the batter.
- Prepare the crumb topping by mixing flour and sugar, then combine with melted butter.
- Fill muffin cups halfway with batter, add cream cheese filling, top with more batter and crumb topping.
- Bake for 18 to 22 minutes, checking doneness with a toothpick.
